Raspberries remain one of the world's most consumed berries and it's no wonder with their their rich color, sweet juicy taste, and antioxidant power. They are known as Nature's candy and have been gathered for thousands of years by humans and animals alike.
This is a quick recipe using rasberries both in the salad and dressing. Easy and very tasty.
Simple and Quick Raspberry Salad
9 cups cut mixed salad greens
3 cups fresh unsweetened raspberries
2 tablespoons olive or canola oil
2 tablespoons cider vinegar
3 1/2 teaspoons sugar
1/8 teaspoon salt
Combine the salad greens and two and one half cups raspberries. Mash the remaining berries; strain, reserving juice and discarding seeds. In a bowl, whisk the raspberry juice, oil, vinegar, sugar, salt and pepper. Drizzle over salad; gently toss to coat. If you enjoy cucumbers thinly slice and add.
